Lavash Roll-ups
16 oz cream cheese
8 oz monterey jack cheese, grated
1/4 cup heavy cream
tortilla wraps (3 to 6 depending on size)
1/2 lb (combined)ham, salami, turkey or other cold cuts, for EACH wrap
Puree cream cheese, grated monterey jack or other mild cheese and heavy
cream in food processor.
Divide among 3 lg lavash (or six very
large flour tortillas).
Layer each with 1/2 lb thinly sliced ham,
salami, turkey or other cold cuts, leaving a two inch border on one side.

Roll up snugly, taking care not to push ingredients out of place.
May be prepared up to one day ahead, but cover with plastic wrap, chill
if holding more than two hours and let stand 1 hour at room temperature
before proceeding.
Just before serving, secure with toothpicks (if desired) and slice
1/2 to 3/4 inch thick.
