Shrimp Ball
1 pound medium-size fresh shrimp
3 cups water
1 (8 ounce) package cream cheese, softened
1 tablespoon prepared horseradish
1 tablespoon lemon juice
2 teaspoons grated onion
1 teaspoon liquid smoke
1/4 cup chopped pecan
2 tablespoon chopped fresh parsley
Bring water to a boil; add shrimp, and cook 3 to 5 minutes.
Drain and rinse with cold water.
Chill.
Peel shrimp, and chop. Combine with cream cheese, horseradish,
lemon juice, onion, and liquid smoke; mix well.
Shape into a ball, and chill.
Combine chopped pecans and parsley; roll cheese ball in pecan mixture.
Chill several hours or overnight. Yield: 1 cheese ball
