1 egg
1 cup chickpea flour (besam)
1 cup milk or soy milk
1 large sweet onion, or more, sliced finely
chopped fresh coriander or parsley
1 tsp cumin
1/2 tsp salt


Mix flour, egg and milk to form a smooth paste. Chickpea flour tends to make lumps. Add cumin, salt and as much onion as you can (with it still holding together) and mix in coriander or parsley. Let sit for a few minutes to set.

Spray a non-stick heated pan with oil; put teaspoonfuls of batter in pan and cook. You want cute, irregular pancakes containing a couple of bites. Brown on both sides. Serve with Indian hot or sweet sauces, sweet and sour sauce, chutneys, salsa or whatever dip or sauce is your pleasure.
