YAKITORI (Barbecued Chicken On Skewers)
1/2 c mirin or saki or sherry
2 Tablepsoons sugar
1 Tablespoon cornstarch
1 sm. chicken, meat removed from bones & cut in bite-sized pieces
6 green onions, cut in 2 inch pieces
2 green peppers, cut in pieces
SAUCE FOR YAKITORI:
Soak bamboo skewers in water.
Bring to a boil mirin (sweet rice cooking wine) or saki or sherry 2 tbsp.
and sugar Mix in 1 tbsp. cornstarch.
Add cornstarch mixture
slowly to boiling sauce, stirring and continue about 1 minute until
the cornstarch cooks and sauce is slightly thickened. Cool. Marinate
chicken pieces about 1 hour in sauce.
Skewer chicken and vegetables on skewers and broil, either in oven or
over charcoal, basting with sauce.
Don't scorch sauce or it will become bitter. Place on large platter to
use as main course.
Pour remaining sauce over skewers and serve
with side dish of rice.
Pieces can be cut smaller
and small skewers used to serve as an appetizer.
