Broccoli With Beef
1 lb. fresh broccoli -- thinly sliced on diagonaland into bite size pieces
1/2 lb. round steak -- sliced thinly across the grain
1 Tbsp. light soya sauce
1 Tbsp. cornstarch
1 dash pepper
few drops of sesame oil (optional)
2 cloves garlic -- crushed
4 Tbsp. peanut oil
Meat slices much easier if it is partially frozen.
1. Marinate beef with soya sauce, pepper, sesame oil (we never have it) and cornstarch for 15 min.
2. Cut the tops of the broccoli ino flowerets and the stalks diagonaly into slices of not more than 1/4 inch thick.
3. In a wok or large skillet, heat up 2 Tbsp. of peanut oil (it has a high smoking point) until smoke begins to rise, put in broccoli, 1/2 tsp. of salt and 1/4 c. of water. Stir mix and cover with a lid. Cook with high heat for 4 min. until steam escapes form the edge of the lid. Remove to a plate.
4. Use high heat and 2 Tbsp. of oil, when hot, brown garlic for a min.
then add beef, stir fry unitl the color of
meat changes. Return broccoli and mix. Serve hot. Serve with plain rice
for a meal, as is. If you are making other Chinese dishes, make this
one last, as the broccoli doen't 'keep' well, and is best served fresh,
otherwise
it tends to overcook.
