BAKED BEANS

2 1/2 C. dry white beans
(Soaked overnight in enough water to cover. Pick out any discoloured beans. Drain, saving the soaking water as part of the cooking water, it's full of nutrients.) Using this water, plus enough cold water to make 5 Cups, cook beans on stove in large covered pot, until boiling. Reduce heat and simmer 30 minutes. Drain, reserving liquid.
1 med. onion, sliced
1 1/2 tsp. salt
1/4 tsp. black pepper
2 1/2 tsp. cider vinegar
2 tsp. prepared mustard
1 1/2 T. brown sugar
1/4 C. molasses
3/4 C. ketchup
1/4 lb. salt pork or bacon, sliced

Preheat oven to 250.

Place onion slices in the bottom of a bean pot or a 1 1/2 quart casserole.

Mix remaining ingredients and pour over onions.

Add beans and enough hot water to cover. Arrange pork slices on top.

Cover and bake for 4 hours.

Remove 1 Cup of beans, mash and carefully stir back into remaining beans.

Cover and continue to bake for 3 hours.

Check to make sure beans are always just covered with liquid. Add more water when necessary.
Serves 8 - 10.
