BLACK BEANS WITH COUSCOUS AND SUN DRIED TOMATOES
4 Slices bacon finely chopped
1 small onion finely chopped
1/4 cup finely chopped green pepper
1 tsp garlic minced
1 tsp ground cumin
1 1/4 cup water or chicken broth
1/3 cup sun dried tomatoes... chopped (already reconstiuted)
1 can 16 oz black beans drained and rinsed
hot pepper to taste
1 cup couscous uncooked
IN a large skillet over medium heat cook bacon until almost crisp.
Add onions, green pepper and garlic and saute
until onion is translucent.
Add cumin, water or broth,sun
dried tomatoes and beans.
Bring to boil, cover and gently simmer
for 10 minutes.
Add couscous, stir, cover and remove from heat.
Let stand for 10 minutes. Fluff and serve immediately.
You can add a dollop of sour cream, lime juice and cilantro on top. This
can be for vegetarians too. Omit the bacon and chicken broth.
