Oatmeal Bread (Wheat Free)
1 cup rolled oats
1 cup hot water
1/2 cup maple syrup or honey
1/4 tsp. sea salt
1 mashed banana
1 cup oat flour
1/4 tsp. baking soda
3 tsp. baking powder
Preheat to 350. Grease a 9 x 5 loaf pan. Mix oats with hot water and let stand for 5 minutes.
Stir in honey, salt and banana. Add flour, baking soda and baking powder; stir until all ingredients are just mixed - do not over mix. Turn into loaf pan and allow to stand for 20 minutes in a warm place. Bake for 45 minutes. Makes 1 loaf.
Variations, if Tolerated:
-Substitute an equal amount of sugar for the honey
-add 2 eggs in place of or in addition to the banana
-add 1/2 cup chopped nuts or raisins
Book states this is a good bread for sandwiches.
