ORANGE BREAD PUDDING WITH ORANGE SAUCE
3 eggs, beaten
1 1/3 c. sugar
1/4 tsp. salt
1 1/2 c. orange juice
4 c. day old bread cubes
1/4 c. each flaked coconut and
seedless raisins
Hot Orange Sauce
Preheat oven to 350.
Mix eggs, sugar, salt and orange juice; pour over bread
cubes.
Add coconut and raisins and pour into 1 1/2 quart
casserole.
Bake for 30 minutes or until set.
Increase heat to 450 degrees about 10 minutes to brown peaks.
Serve warm with sauce. Makes 6 servings.
Hot Orange Sauce:
1/2 c. sugar
1 Tbsp. cornstarch
dash of salt
1 c. orange juice
1 tsp. grated orange rind
In saucepan, mix sugar, cornstarch and salt. Add orange
juice and orange rind.
Bring to boil and cook, stirring until
smooth and thickened. Stir in 2 tablespoons butter.
