Sweet Bread Orange Loaf

Orange Loaf

2 1/2 cups flour
4 tsp. baking powder
1/2 tsp. salt
1 stick butter, cut into pieces
1 cup sugar
3 eggs
1 whole orange, de-seeded, rind on, washed and cut into pieces -- pick a nice juicy one, preferably one without the thick type of rind, to avoid getting to much bitter pith)
1/2 cup milk


Put flour, baking powder and salt into food processor bowl and fluff it up a bit to "sift" it. Add butter pieces to the bowl and work it in till the mixture looks like coarse meal. Pour into a largish bowl.

Put eggs, sugar and orange into food processor bowl and whirl till orange is in tiny bits. Add milk and mix. Add wet ingredients to dry and stir in till just moist. Pour into a prepared 10" tube pan or loaf pan and bake at 350 degrees for 45-60 minutes or till a toothpick comes out clean. Let rest in pan for a few minutes before turning out onto a cake rack.
