Eureka's Peanut Butter Banana Bread
2 C. sugar
1/3 C. butter*
1/3 C. peanut butter
4 eggs, slightly beaten
2/3 C. water
3. C. mashed ripe bananas
4 C. flour
2 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1 C. chopped peanuts
English Toffee bits, optional
Heat oven to 350 F.
Grease bottom of two 8 or 9-inch loaf pans. Mix sugar, butter and peanut
butter until creamy. Stir in eggs until blended.
Add bananas and water; beat 30 seconds. In a separate bowl stir together
flour, baking soda, salt and baking powder.
Make a well in dry ingredients and pour wet ingredients into well and
mix together just until moistened. Stir in nuts. Pour into pans.
Sprinkle English Toffee bits over top if desired. Bake for about
1 1/4 hours or until wooden pick inserted in center comes out clean.
Remove from pans immediately and cool before slicing.
*To make a more peanut buttery bread you probably could use 2/3 C. peanut butter instead of 1/3 C. butter and 1/3 C. peanut butter. I haven't tried this yet, but it probably would work.
