Apple-Mincemeat Cake

3 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon salt
1 cup vegetable oil
1/2 cup (1 stick) butter, melted and cooled
1-1/2 cups firmly packed dark brown sugar
3 large eggs, lightly beaten
1-1/2 cups grated tart baking apples
1-1/2 cups mincemeat, preferably homemade
1/2 cup chopped walnuts or pecans
1 teaspoon vanilla
Whipped cream or confectioners' sugar


Preheat oven to 350°F. Grease a 10-inch tube or Bundt pan very well.

In a medium mixing bowl, sift together the flour, baking powder, spices and salt. In separate large mixing bowl, combine the oil, butter, and brown sugar and beat until smooth.

Beat the flour mixture into the sugar mixture, adding a third of the flour mixture at a time, and beating until smooth after each addition. Beat in the eggs, one at a time. Stir in the grated apple, mincemeat, pecans and vanilla.

Pour the batter into the prepared pan and bake for about 1 hour, or until a cake tester inserted in the thickest part of the cake comes out clean.

Turn the cake out onto a serving platter and serve warm with unsweetened whipped cream. Or turn the cake out onto a wire rack and allow to cool completely and then dust the cake lightly with confectioners' sugar.
Makes one 10-inch tube cake
