BUTTER BRICKLE CAKE
2 cups all-purpose flour
1-1/3 cups sugar
1 tablespoon baking powder
1 teaspoon salt
1/2 cup butter-flavored shortening
1 cup milk
1-1/2 teaspoons vanilla
3 egg whites
Preheat oven to 350 °F. Grease and flour baking pan (13 by 9 inches). Sift together dry ingredients.
Beat in shortening, milk, and vanilla. In another bowl, beat egg whites for 1 minute, then add to batter and beat for 2 minutes. Pour batter into pan.
Bake for 20 to 25 minutes. Cool, then cover with frosting.
To make frosting:
1/4 cup butter
2 tablespoons evaporated milk (or half and half)
2 cups powdered sugar
1-1/2 teaspoons vanilla
2 tablespoons hot water
Melt butter until it begins to brown. Remove from heat and add all other ingredients. Beat at medium speed for 3 minutes. Set cake on rack with tray underneath, pour frosting over cake, and let set before moving to serving plate.
