Chocaroon Bundt Cake
2 egg whites
1/3 cup sugar
2 tbsp. flour
1 3/4 cup flake coconut
1 (2 layer size) package chocolate cake mix
1/3 cup oil
1 (4 serving size) package instant chocolate pudding and pie filling
2 eggs
2 egg yolks
Preheat oven to 350 degrees F.
Beat egg whites until foamy. Add sugar gradually and beat until stiff shiny peaks form.
Blend in flour and coconut; set aside.
Combine remaining ingredients in a large bowl. Blend, then beat with an electric mixer at medium speed for 2 minutes. Pour 1/3 of the batter into a greased and floured 10 inch bundt cake pan. Spoon in coconut mixture and top with remaining batter.
Bake for 50 to 55 minutes or until a cake tester inserted comes out clean. Cool in pan for about 15 minutes. Remove from pan and finish cooling on a wire rack. Top with glaze.
Glaze:
1 cup powdered sugar
1 tbsp. milk
Gradually add milk to powdered sugar and mix well.
Makes 1/3 cup glaze.
