Chocolate Marshmallow Cake
Source: Taste of Home 2000 Annual recipes
1/2 cup butter
2 sq. unsweetened chocolate (1oz each)
1 cup flour
1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
2 eggs
1 cup sugar
1/2 cup unsweetened applesauce
1 tsp. vanilla
1 (10 ½ oz) pckg. mini marshmallows, divided
Glaze
1/2 cup sugar
2 T. milk
2 T. butter
1/4 cup choc. chips
Preheat oven to 350° F and grease a 9x13” pan.
In double boiler, melt butter and chocolate; cool 10 min.
Combine dry ingredients, set aside.
In a mixing bowl, beat eggs, sugar, applesauce and vanilla.
Stir in chocolate mixture.
Add dry ingredients; mix well.
Pour into a greased 9x13" pan.
Bake for 20-30 minutes, or until cake tests done.
Set aside 1/2 cup mini marshmallows.
Sprinkle remaining ones over cake.
Return to oven for 2 minutes or until marshmallows are softened.
In a saucepan, combine sugar, milk and butter.
Bring to a boil; boil 1 1/2 minutes.
Remove from heat.
Stir in chocolate chips and reserved marshmallows until melted.
Quickly drizzle over cake (glaze will harden as it cools.)
Yield: 12 -16 servings.
