EGGNOG BUNDT CAKE w/ EGGNOG FLUFF FROSTING
2 c. AP flour
1 1/2 c. Sugar
1/4 c. Shortening
1/4 c. Butter or marg., softened
1 c. Eggnog or Milk
3 1/2 ts. Baking powder
1 ts. Salt
1 ts. Nutmeg
1/4 ts. Ginger
1 ts. Rum extract, optional
3 Eggs
EGGNOG FLUFF:
1 1/2 c. Whipping cream (heavy cream)
1/2 c. Powdered sugar
1 ts. Rum extract or rum (to taste)
1. Preheat oven to 350 degrees. Grease & flour a
Bundt pan or 2 round pans.
2. Beat all cake ingredients on med. speed for 30
seconds, scraping bowl constantly. Beat on high speed
3 minutes, scraping bowl occasionally. Pour into pan(s).
3. Bake Bundt pan for 40-45 min., round pans for 30-35
minutes, or until pick inserted in center comes out
clean. Cool for aout 10 minutes; remove from pan(s).
Cool completely.
4. Frost top & sides of Bundt or fill & frost layers
with Eggnog Fluff: Beat all ingredients in chilled
bowl until stiff.
