Fig Walnut Crumble
Yield: 9 servings
3 c Chopped fresh Figs
2 Eggs
1/3 c Orange juice
1/2 c Packed brown sugar
2 T Flour
2 t Grated orange rind
1/4 t Baking powder
3/4 c Chopped walnuts
Whipped cream or ice cream
CRUST:
1 c Regular rolled oats
1/2 c Flour
1/4 c Packed brown sugar
1/4 t Salt
2/3 c Butter or margarine
Prepare Crust:
Preheat oven to 350 F. Grease & flour 8 x 8 x 2" baking pan. Combine oatmeal, flour, brown sugar, salt. Using a pastry
blender, cut in butter or margarine until mixture resembles small peas.
Sprinkle 1/2 mixture in greased baking pan. Press down well. Bake crust about 12-15 minutes or until lightly browned. Set aside remaining crumbs
Filling: Beat eggs until frothy. Add orange juice, brown sugar, flour, orange peel & baking powder. Beat about 3 minutes or until slightly thickened. Stir in figs & walnuts. Pour mixture over baked crust.
Sprinkle on remaining crumb mixture. Continue baking 30-35 minutes more or until mixture is set in center. Cool and cut in 9 squares or in 16 bars. Can serve topped with whipped cream or ice cream.
