Mayonnaise Cake
3/4 cup mayonnaise
1 cup sugar
3 heaping teaspoons baking cocoa
1 teaspoon vanilla
1/4 tsp. salt
2 1/4 c. all purpose flour
1 cup boiling water
1 tsp. baking soda
1/2 tsp. baking powder
1 cup chopped nuts
1 cup chopped date
Combine the 1 cup boiling water with the teaspoon of soda. Add the nuts and dates. Let stand.
In a separate bowl, cream the mayonnaise and sugar; add the cocoa and vanilla. Sift the flour salt and baking powder together. Combine with the nuts and dates and stir until well mixed. Bake in a greased 8-inch square pan at 350* for about 30 minutes. Frost with a light brown chocolate frosting.
