One-Egg Cake
souce: Seasons of Thyme
3/4 cup sugar
3 tbsp. shortening
3 tbsp. baking powder**?? see note below
1/8 tsp. salt
1 cup flour
3/4 cup milk
1 tsp. vanilla
1 egg
Preheat to 350.
Cream sugar and shortening. Add remaining ingredients. Bake in a gresed 9 inch square pan for 25 to 30 minutes.
Sauce:
1/2 to 3/4 cup sugar
1 heaping tbsp. flour
pinch of salt
1/4 cup butter
1 cup milk
Flavoring of your choice - vanilla, almond extract, lemon extract, nutmeg, cinnamon, etc. Your choice.
Recipe states also good with a small can of crushed pineapple, drained. Also good with no sauce, with fresh strawberries and whipped cream.
Combine all ingredients in a saucepan. Heat, stirring constantly, to keep from sticking. Continue until thickens slightly - you do not want this too thick.
**??I think this is an error. I prepared the recipe as written and it bubbled all over the oven. I think it should be 3 tsp. The cake was very good, in spite of the mess in the oven. I used a combination of vanilla extract, almond extract and a pinch of cinnamon in the sauce.
Too much baking powder! The general rule is 3 tsp. for 2 cups of flour so 1 1/2 tsp. should be about right
