Cake Poppy Seed Cake

Poppy Seed Cake

1/2 cup poppy seed
1 cup sour milk
3/4 cup shortening
1 1/2 cups sugar
1 1/4 cups sifted all purpose flour
1 1/2 tsp double acting baking powder
1/2 tsp baking soda
Pinch of salt
1 tsp vanilla
5 egg whites, stiffly beaten

* re sour milk: 1 cup milk, add 1 tablespoon vinegar and let stand 30 minutes.


Soak poppy seeds overnight in sour milk. Cream shortening with sugar, add poppy seed mixture. Mix flour
with baking powder, baking soda and salt, and add to batter. Add vanilla. Fold in egg whites. Pour into three greased 9 inch layer pans. Bake at 350 degrees for 25 to 30 minutes. Fill and frost.

Filling: Combine 1/2 cup firmly packed brown sugar, 1/2 cup granulated sugar, 1 tablespoon cornstarch and pinch of salt in saucepan. Add 1 cup half and half milk and 5 beaten egg yolks. Cook and stir until thickened, cool.

Frosting: Combine 3 tablespoons flour and 3/4 cup milk, mix or shake in covered container until smooth. Cook in saucepan until thick. Cool Beat together 1/3 cup shortening and 1/3 cup butter. Add 2/3 cup sugar and beat 4 minutes. Add flour mixture and beat 4 minutes longer. Add 1 tsp vanilla.
