Red Wine Cake of Assmannshausen

INGREDIENTS:
250g. butter, softened (8 ozs)
250g. sugar (8 ozs)
4 eggs
1 teaspoon (5ml.) vanilla essence
250g. self raising flour (8 ozs)
3 heaped tablespoons cocoa (+ 3 teaspoons)
2 1/2 tablespoons cinnamon
1 pinch salt
100g. chopped dark chocolate (3 1/2 ozs)
100g. chopped almonds (3 1/2 ozs)
125ml. German style red wine (4 ozs)
icing sugar, (powdered sugar)
METHOD:
Preheat oven to 175° C. (325° F). and butter a kugelhopf or loaf tin.
Beat together butter, sugar, eggs and vanilla essence until light and fluffy then fold in flour, cocoa, cinnamon and salt.
Mix well, then when batter is smooth, add red wine, chocolate and nuts and mix well.
Pour into prepared tin and bake for 70-80 minutes.
Remove from oven and cool slightly before removing from tin.
Dust with icing sugar and serve warm or cool with cream.
