Strawberry Fresh Strawberry Cake by Pat T
1 stick (8 Tblsp.)butter
1/3 c. shortening
1-3/4 c. sugar
1/2 c. sliced fresh strawberries
1 (6 oz.) box strawberry Jell-O
2-2/3 c. sifted all-purpose flour
3-1/2 tsp. baking powder
1/2 tsp. salt
1-1/3 c. milk
1 tsp. vanilla
4 egg whites, stiffly beaten in separate bowl
Strawberry Frosting (see below)
Preheat oven to 350.
Cream butter, shortening and sugar until light. Add strawberries and beat well.
Sift dry ingredients together.
Add alternately with milk. Add vanilla and beat well. Fold in beaten egg whites.
Turn into 3 lightly greased and floured 8-inch pans. Bake for 30 to 35 minutes.
Strawberry Frosting
1 box (1 lb.) 10X powdered sugar
2 Tblsp. margarine
1/2 c. sliced fresh strawberries, chopped
Frosting: Beat all together; spread on completely cooled cake.
