Cheesecake Baileys Irish Cream

BAILEY'S CHEESECAKE

1 1/2 cups graham cracker crumbs
6 Tbls. butter, melted
1/4 cup granulated sugar

Combine all ingred. in mixing bowl. Blend well and press mix onto the bottom and partly up the sides of a greased 9" springform pan. Chill 10 minutes.

Cheesecake Filling:
1 (5 oz.) bar milk chocolate (be choosy--good quality candy, here)
1 1/2 pounds cream cheese
2/3 cup powdered sugar
4 large eggs
1/3 cup Bailey's Irish Cream
4 Tbls. butter, melted
1 cup sour cream

Preheat oven to 350. Melt chocolate over double boiler or microwave carefully, not to scorch. Meanwhile, beat together the cream cheese and sugar in a large bowl. Beat in the eggs, one at a time, mixing thoroughly after each egg.
Stir in the melted chocolate, then add the Bailey's, butter and sour cream. Blend well. Pour the mixture in the graham cracker crust and bake for 45 minutes. Now prop open the oven door and let the cake cool to room temp.
