BEST COFFEE CAKE

1 pkg. yellow cake mix
4 eggs
1 c. apricot nectar
1 c. Wesson oil
1/4 tsp. lemon extract

Mix ingredients and pour into greased tube pan. Bake approximately 30 minutes at 350 degrees.

Icing:

3 lemons, juiced
1 to 2 c. powdered sugar*

While cake is still in the pan and warm, poke holes with skewer or a chopstick all over top. Pour icing in holes and all over cake top. When cool invert onto serving plate and sprinkle with powdered sugar.

*The recipe called for 1 c. powdered sugar, but my lemons were large and juicy so I added more until it was still pourable but not so tart.
