Christmas Cake
Grease an 8x8x3 in cake pan( I use the round ones. There are 3 to a set and makes 3 different size cakes. Also the
bottom pushes out,making it easy to remove cakes) Line with brown paper cut to fit pan(s)and grease again.
Combine and let stand overnight:
2 cups raisins
1 cup currants
1 cup chopped dates
2 (8 0z. pkg) glace cherries
1 (8 0z.pkg)chopped mixed peel
1 (4 0z. pkg)chopped walnuts
1/2 cup brandy
The next day, dredge fruit mixture in:
1/2 cup flour
Sift together:
2 cups flour
1/2 tsp salt
1/2 tsp baking powder
1 tsp ground cloves
1 tsp allspice
1 tsp cinnamon
Cream:
1 cup butter
Gradually, beat in
2 cups lightly packed brown sugar
6 eggs
Mix together;
3/4 cup molasses
3/4 cup apple juice
Add sifted dry ingredients to creamed mixture alternately with liquid. Make 3 dry and 2 liquid additions,combining
lightly after each. Fold in floured fruit. Turn into prepared pan(s)
Bake in 275 degree oven for 3 hrs( I bake this long using 3 pans but if you are using just the one pan,you may have to bake 1/2 hr. longer)or until cake(s) test done with a toothpick.
Remove from pan(s)and lift off brown paper.Cool and store. I always wrap mine in brandy soakd cheesecloth.It keeps it moist and keeps it longer, to say nothing of how it tastes!
