Pudding Candy Clusters
1 package ( 3 oz ) vanilla pudding ( not instant)
1 cup sugar
1/2 cup evaporated milk
1 tbsp butter or margarine
1 cup salted peanuts
1/4 tsp vanilla
Blend dry pudding and sugar in 2 quart saucepan. Stir in evaporated milk. Add butter. Cook and stir over medium heat until it comes to a boil. Lower heat and boil gently for 3 minutes. Stir constantly. Remove from heat. Stir in peanuts and vanilla. Beat immediately (while pudding is hot ) It will become somewhat dull.Pour in greased loaf pan or drop by teaspoon onto foil. Let cool until set.
Variations:
for chocolate- use 1 ( 3 oz ) pkg chocolate pudding and walnuts or raisins instead of vanilla pudding and peanuts
for butterscotch--use 1 ( 3 oz) pkg butterscotch pudding and pecans instead of vanilla and peanuts
for cocoanut cream-- use 1 ( 3 oz) pkg cocoanut cream pudding in place of vanilla
for lemon-- use 1 ( 3 oz) pkg lemon pudding instead of vanilla. Omit the vanilla flavoring and use 1 cup flaked cocoanut in place of peanuts
