Lemon Bars

3/4 c. unsalted butter -- softened
1/2 t. salt
2 c. all-purpose flour
4 eggs
1 1/2 c. sugar
4 T. all-purpose flour
1/2 t. finely grated lemon peel
1/3 c. lemon juice
1/2 t. baking powder
1 1/2 c. shredded coconut -- divided


Preheat oven to 350 degrees. Grease a 13x9x2" pan.

In a small mixer bowl beat butter till softened. Add the 1/2 c. sugar and salt and beat until fluffy. Stir in 2 c. flour. Press dough onto the bottom of a greased 13x9x2" pan. Bake for 15 minutes.

Meanwhile, in a mixer bowl, beat eggs. Add the 1-1/2 c. sugar, 4 T. flour, lemon peel, lemon juice, and baking powder. Beat about 3 minutes or until slightly thickened.
Sprinkle baked crust with 3/4 c. coconut. Pour the lemon mixture over the baked crust and coconut. Sprinkle with remaining coconut.

Return to the 350 degree oven and bake for 25 to 30 minutes, or till edges are light golden brown and center is set. Cool. Cut into squares. Makes 32.
