Pecan Chess Bars
Crust:
1/2 cup (1 stick) butter, softened
1/2 cup vegetable shortening
1/2 cup confectioners' sugar
2 cups all-purpose flour
Topping:
1/4 cup (1/2 stick) butter, melted
1 cup dark corn syrup
1-1/2 cups firmly packed light brown sugar
1/4 teaspoon salt
6 large eggs, lightly beaten
1-1/2 teaspoons vanilla
3 cups coarsely chopped pecans
Preheat the oven to 350°F.
In the bowl of an electric mixer, cream the butter, shortening and confectioners' sugar together until light and fluffy. Add the flour and beat until smooth. Evenly press the mixture into the bottom of a 9x13-inch baking pan. Bake until the edges are lightly browned, about 15 minutes. Remove the pan to a wire rack to cool slightly while you make the topping.
In the mixer bowl, combine the melted butter, dark corn syrup, brown sugar, and salt and beat until smooth. Beat in the eggs and vanilla. Stir in the pecans. Spread this mixture over the crust.
Bake until the topping is set and lightly crusted, 30 to 40 minutes. Remove to a wire rack to cool completely and then cut into 1x2-1/2 inch bars.
Makes about 4 dozen
