Chocolate Chip and Cinnamon Sugar Sheet Style Biscotti

1 cup unsalted butter, melted
1 1/2 cups sugar
4 eggs
2 teaspoons pure vanilla
1/4 teaspoon orange oil or extract
1 tablespoon baking powder
1/2 teaspoon salt
4 cups all-purpose flour
1 cup coarsely chopped semi-sweet chocolate or chunks
1 cup walnuts, chopped (optional)
cinnamon and sugar for sprinkling
non-stick cooking spray
Preheat oven to 350 F. and generously grease a 9 by 5 inch loaf pan with non-stick cooking spray and line bottom with a sheet of parchment paper.
In a mixing bowl, blend sugar and butter, then eggs, vanilla, orange oil or extract.
Stir in baking powder, salt and flour to make a stiff batter.
Spoon half batter into prepared pan.
Sprinkle on chocolate and walnuts (if using) .
Sprinkle lightly with cinnamon and sugar.
Top with remaining batter (use wet hands to pat into place) .
Sprinkle with additional sugar and cinnamon.
Bake until set (like a cake) 45-55 minutes.
Cool well then chill an hour in freezer.
Preheat oven to 325 F.
Turn loaf out onto a work board and cut into 1/4-inch slices.
Place on parchment-lined baking sheets and bake to crisp (10-15 minutes), turning once.
