STRAWBERRY BUTTONS
1 (10 oz.) pkg. thawed frozen strawberries, drained
1 1/3 c. flour
1/2 tsp. baking powder
1/4 tsp. soda
1/4 tsp. salt
1/2 c. vegetable shortening
2/3 c. sugar
1 egg yolk
1/2 tsp. vanilla
1 tsp. lemon juice
Sift together flour, baking powder, soda, and salt. Blend together shortening and sugar, creaming well. Add egg
yolk, vanilla, and lemon juice; beat well.
Measure 1/2 cup drained strawberries. Add alternately with dry ingredients to creamed mixture, ending with strawberries. Drop by half teaspoonsful onto greased baking sheets.
Bake in moderate 375 degree oven for 8-10 minutes. Cool 1-3 minutes; remove from baking sheet. Top with small dot of icing made with powdered sugar and strawberry juice.
