Soft Ginger Cookies

1 cup sugar
1 cup molasses
1 cup shortening
2 eggs
2 tsp. baking powder
1 tsp. ginger
1 tsp. salt
1 tsp. Cloves (ground)
1 tsp. cinnamon
1 teaspoon cardamom
4 to 5 cups flour
1/2 cup hot water with 1/2 teaspoon baking soda in it.


Preheat oven to 375° F.

Creaming shortening, sugar and molasses well then blending eggs in one at a time.

Combine dry ingredients, except flour. Mix together shortening mixture with dry ingredients and water. Gradually add flour until a stiff but pliable dough is formed.

Chill for about 1 hour.

Knead, roll out, cut out and bake at 375° for 10 mins. Decorate as desired.

Note: If you want to you can add raisin or currant eyes and buttons before baking.
