Cold Rhubarb Creme Dessert

Rhubarb Creme Dessert

Bottom:
1/2 c. butter
1/2 c. sugar
2 c. flour
1/4 tsp. salt

Middle:
Beat 6 eggs yolks
Add 2 c. sugar
1/4 tsp salt
2 T. flour
1 c. cream
5 c. cut up rhubarb

Meringue:
Beat 6 egg whites
1/2 c. sugar


Mix bottom ingredients and press into a greased 9 x 13-inch pan. Bake at 350 degrees.

Beat egg yolks and add remaining ingredients. Pour over crust. Bake 1 hour at 325°.

Beat egg whites and add sugar.Spread on top and bake at 325° until golden (7-10 minutes).
