Pineapple Drop Doughnuts
3 cups flour
3/4 cup sugar
2 tablespoons baking powder
3/4 teaspoon salt
3 eggs
1 cup milk
20 ounces pineapple chunks, crushed and drained
2 cups oil
Heat oil to 375 °F in skillet or deep fat fryer.
Combine flour, sugar,
baking powder, and salt. Blend in eggs, milk, and crushed pineapple
chunks.
Drop batter by tablespoonfuls into hot oil, frying for 1 minute
per side. Drain on paper
towels. Serve hot, sprinkled with confectioners sugar.
