Homemade Lemon Curd
6 egg yolks
1 cup sugar
1/2 cup fresh lemon juice
Stir and cook for 10 to 12 minutes, stirring constantly until it coats spoon. Don't allow to boil.
Remove from the heat and add 1/2 cup (1 stick) butter, cut in small pieces. Whisk in. Add 1 tablespoon lemon zest (peel). Pour into a sterile jar and refrigerate.
Makes 1 pint
