Apple and Sausage Quiche
from The 1801 Inn B&B

1 (9") deep dish pie shell
1/2 lb. lean sausage (such as Jimmy Dean Maple)
1/2 chopped onion
4 TBSP. butter
4 TBSP. brown sugar ( or use 2 TBSP. If using the sausage that is already seasoned with maple)
4 Granny Smith apples, peeled, cored and chopped
3/4 cup shredded cheddar
1-2 egg yolks
2 whole eggs
1/2 milk, half & half of low fat buttermilk
1/2 tsp. tarragon


Saute onion until translucent. Add sausage and sprinkle with brown sugar. Break sausage into small pieces and drain on paper towel. Place in pastry shell.

Saute apples in a little butter for 2-3 minutes; add brow sugar. Put on top of the sausage. Add cheese.
Beat eggs and dairy products, add tarragon and pour into pie shell.

Bake at 350 for 25-35 minutes.
