Candy Apples

8 wooden popsicle sticks 
8 small red or golden delicious apples 
1 cp water 
3 cp sugar 
1/2 cp light corn syrup 
1/4 cp red-hot candies 
1/2 tsp red food coloring 

Wash and dry the apples and push a popcicle stick into the stem end of each
one. Grease a large cookie sheet and set aside. 

In a med size saucepan combine the remaining ingredients. Using med heat 
bring the mixture to a boil without stirring.

Continue to boil, without stirring, until a candy thermometer reads 290* or
a little of the mixture separates into thin hard threds when dropped into 
cold water, about 20-25 min. 

Occasionally brush the sugar from the sides of the pan with a brush dipped 
in hot water while the mixture cooks. 

When cooked, remove syrup from heat and, tipping the pan, swirl each apple
in mixture to coat. Lift the apple out of syrup mixture and hold it over 
the pan a few seconds to allow any drips to fall back in to pan. 

Place apples on cookie sheet to cool. You need to work swiftly before syrup
hardens. If it does harden before you get all the apples dipped place over 
very low heat until it softens enough to continue Let apples cool at least
1 hour before serving.
