Creamed Chipped Beef
3 Tablespoons butter
3 Tablespoons flour
2 cups milk
3 jars sliced dried beef (2.25 oz jars)
2 Tablespoons Sherry Wine
In a small bowl chop up chipped beef and pour boiling water over to cover. Stir and strain thoroughly and set aside. This will remove a lot of the salt.
In a medium sauce pan melt butter and stir in flour until well blended. Add milk, stirring constantly.
Add chopped beef. Simmer until thick. Add sherry just before serving over hot biscuits.
Serves 6
