Breakfast Pork Sausage
3 pounds pork, ground from shoulder
1 1/2 tbs. salt
1 1/2 tsp. freshly ground black pepper
2 tsp. sage
1/2 tsp. thyme
1/2 tsp. ground ginger
1/2 tsp. ground nutmeg
1/2 tsp. ground coriander
1 tsp. cayenne pepper
Mix well, or grind together. Make patties, of which this recipe yields about 10.
