Swedish Potato Sausage
One medium onion, chunked up
1 Tbl. salt
1-1/2 tsp. black pepper
1 tsp. powdered allspice
6 cups potatoes pared and cut up
1 1/2 lb. lean beef chuck
1 lb. lean pork butt
1/2 cup ice water
Grind all the meat, potatoes and onion thru a 3/8's inch grinder plate and place in bowl large enough to mix in.
Add remaining ingredients to water and add all to the meat. Mix well. Regrind, then stuff into casings.
This sausage is very perishable, cook it or freeze it.
