Veal and Bacon Roulade
1 cup milk
4 tbsp. flour
1/2 tsp. ground nutmeg
Salt and pepper to taste
8 slices veal, pounded thin
8 slices bacon
8 toothpicks
In a small saucepan, bring milk to a boil, season with salt and pepper and ground nutmeg; remove from heat.
Pour milk on veal, then set aside to cool.
Place a slice of bacon on each piece of veal.
Roll veal and secure with a toothpick; repeat with remaining veal.
Dredge roulades in flour, then deep fry until golden-crisp.
Serve with bread toasts or pasta with white sauce.
