posted by Angela22 07-19-98 6:55 AM Mediteranean Orzo Salad 1 cup uncooked orzo 3 tabs chopped red onion 1 cup seeded chopped tomato 1/4 cup celery 2 tabs. fresh basil - chopped 2 tabs. chopped kalamata olives 2 tabs. capers 1 tsp. grained dijon 1/4 tsp. sugar 1 tab. balsamic vinegar 2 Tabs. garlic flavored oil salt and pepper 3 1/2 oz. chevre or feta cheese - crumbled Cook orzo, drain and cool. Mix the pasta with onion, celery, tomato, basil, olives and capers. In small bowl whisk together the mustard, sugar, and vinegar. Gradually beat in oil until emulsion forms....Pour vinegarette over pasta mixture - Chill - Mix in cheese.
