Fool M'dammas

Serves 4 (can easily double or more)
2 tins broad (or I use chick peas) drained and rinsed;
2 cloves garlic - crushed;
1/2 cup olive oil; - might be a bit much. Play it by ear.
juice 1 lemon (or to taste)
1 teaspoon salt (taste 1st)
1/4 teaspoon black pepper
chopped parsley
Mix drained and rinsed peas with everything else. Mix well. serve hot or cold.
Sprinkle with more chopped parsley. Refrigerate leftovers- you'll be
lucky!
