Basic Seasoning
1 lb 10 oz. Table salt
1 Tblsp. Onion salt
2 Tblsp. Celery salt
1 Tblsp. Garlic salt
2 Tblsp. Paprika
4 Tblsp. Black pepper
4 Tblsp. White pepper
2 Tblsp. Dill salt
3 Tblsp. monosodium glutamate
4 Tblsp. white sugar
Mix throughly, store in a covered jar in a dry place, let it stand at least several days, the longer the better, before use.
For a spicier flavor, add 1 Tblsp. mace and/or nutmeg.
For a hotter mixture, add 1 Tblsp. of curry powder and/or dry mustard.
Liberally apply Basic Seasoning to turkey breast. Moisten the breast if necessary to make the seasoning adhere.
Place the turkey on the rack with the oven at 200* to 225* F. Baste with butter or vegetable oil; about three times is usually sufficient. A meat thermometer in the heavy part of the breast, not touching bone, will indicate when the bird is cooked.
