Epices Fines
1 tbsp. each bay, clove, mace, nutmeg, paprika, thyme
1 1/2 tsp. each basil, cinnamon, marjoram or oregano, sage, savory
1/2 white peppercorns
Grind everything together very finely. Store in an airtight jar.
Use approximately 1 level tsp. to each 3 lbs. of meat mixture. But you can vary this according to personal taste.
