Greek Lamb Kebabs

  Greek Lamb Kebabs

  2 lbs. boneless meat or poultry, cut into 1 inch cubes 
  1/2 cup olive oil 
  Juice of 1 lemon or 1/2 cup vinegar or dry wine 
  3 cloves garlic, minced 
  1 tsp. (each) oregano and chopped parsley 
  Salt and pepper, to taste 
  1 green pepper, cut into 1 inch squares 
  Onions, cut into 1 inch pieces or small wedges 
  Cherry tomatoes 

Place meat, green peppers, onions and tomatoes in a stainless or glass 
bowl. Combine olive oil, lemon juice, garlic, oregano, parsley, salt and 
pepper. 

Pour over meat cubes. Cover and marinate in refrigerator at least 3 hours 
or overnight, turning occasionally. Thread meat, green peppers, onions and 
tomatoes alternately on skewers. 

Grill until desired doneness.  6 to 8 servings
