Bow Tie Noodles with Cauliflower and Pine Nuts
2 TBS. olive oil
1/2 C onion, minced,
2 tsp. minced garlic
1 head cauliflower (about 1 1/2 lb.) cut into florets
1 C chicken broth
2 TBS balsamic vinegar
1/2 C golden raisins
salt and pepper, to taste
8 oz. cooked bow tie noodles
1/4 C toasted pine nuts
1/4 C grated parmesan
1/4 C minced fresh parsley
Heat olive oil in large skillet over medium heat. Add onion and cook 2 minutes. Add garlic and cauliflower; cook 1 minute. Add chicken broth, vinegar, and raisins. Bring to a boil, reduce heat and simmer, covered, until just tender, about 10 minutes. Cauliflower should not be mushy. Season with salt and pepper. Toss with bow ties, pine nuts, cheese and parsley. Serves 4.
