Maamul
Filling:
2-1/2 pounds dates, ground
1-1/2 tsp. ground cinnamon
1 cup ground nuts (optional)
1/8 pound margarine
Pastry:
3/4 pound margarine plus 1/2 of one quarter pound more
3 cups semolina (cream of wheat can be used)
3 cups flour
1 cup tap water
Preheat oven to 350 degrees F.
Prepare Filling:
Mix all ingredients for filling. Roll into a sausage shape between 1/4" to 1/2" thick.
Bake at 350 F on ungreased cookie sheet for 25 to 30 minutes. They shouldn't be too golden.
Sprinkle with powdered sugar while still warm. May be frozen before baking.
Prepare Pastry:
Place first 3 ingredients for pastry in a mixing bowl.
Mix with 2 knives in a crossing motion, with palms of your hands or with a pastry cutter until mix is consistency of thick sand.
Add water and continue mixing by hand.
Throw dough on a pastry board or table several times.
Roll out to 1/4" thickness and cut into strips.
Place filling sausage in center of strip and fold over ends pinching at top.
Cut to about 2-1/2" to 3" long and pinch pastry ends to close.
Use a maamul pincher or a pair of eyebrow tweezers to pinch along top to decorate.
