Mint Chocolate Cream Pie
1 graham cracker pie shell
Filling:
3 oz. unsweetened chocolate
1/2 stick (1/4 cup) butter
2/3 cup sugar
3 Tblsp. cornstarch
3 Tblsp. crème de menthe (preferably white)
3 large eggs
1 tsp. vanilla
1/2 cup heavy cream, well chilled
Topping:
1/2 cup heavy cream, well chilled
1 Tblsp. sour cream
1 Tblsp. powdered sugar
Filling: Melt butter and chocolate, stirring until smooth; set aside. Whisk together cornstarch, sugar, crème de menthe, and eggs. Whisk in chocolate mixture and remove to a saucepan. Bring custard to a simmer over moderately low heat, whisking constantly. Transfer to clean metal bowl. Set bowl in a larger bowl of ice and water; stir in vanilla. Stir custard just until thickened and cool; remove from bowl of ice water.
In another bowl, with an electric mixer, beat cream until it makes stiff peaks; fold gently into custard. Pour filling into pie shell; chill at least 2 hours.
Topping: Beat cream with sour cream and powdered sugar until it makes stiff peaks. Spread evenly over pie and garnish with grated chocolate or chocolate curls.
