From Miss Patty's cookbook.
Chess Pie

2 cups sugar
1/2 cup butter
6 egg yolks
1 tbsp corn meal
1 tbsp flour
1 tsp vanilla
1 (13 oz) can evaporated milk


Preheat oven to 350° F.

Cream together sugar and butter. Add egg yolks and mix well. Fold in the remaining ingredients. Pour into an unbaked pie shell and bake about 30 minutes, until set, at 350.



Chess Pie

5 tbsp white corn meal
1 2/3 cup sugar
pinch of salt
4 eggs
5 tbsp milk
1 tbsp lemon or vanilla extract
1/2 cup butter


Preheat oven to 350° F.

Sift corn meal, sugar and salt together. Add well beaten eggs. Add milk and extract of choice.

Heat butter to boiling point and pour over conr meal and egg mixture. Stir until well blended. Put in an uncooked pastry shell and bake at 350 until filling has set and pastry is brown. (The baking time isn't given.)



Chess Pie

Crust:
1 1/2 cups flour
1/2 cup shortening
1 scant tsp salt
1/2 cup ice water


Mix flour and shortening into size of small peas. Add salt and ice water slowly. Mix into ball and roll out on floured board.

Chess pie filling:
1/2 cup butter or margarine
2 cup sugar
5 eggs
2 tbsp corn meal
pinch of salt
2 tsp vanilla


Preheat oven to 350° F.

Cream butter and sugar. Add eggs, salt, corn meal and vanilla. Beat well and pour into unbaked pie shell. Bake at 350 for 1 hour or until set in center. 6 to 8 servings.

1/2 c butter
1 1/2 c sugar
1 tbsp corn meal
1 tbsp vinegar
1 tsp vanilla
3 eggs, slightly beaten
1 uncooked pie shell


Melt butter in saucepan over low heat. Add sugar and mix well. Add other ingredients and mix. Pour into pie shell. Bake for 45 minutes at 325.

1 unbaked pie shell, 9-inch
3 eggs
1/2 c butter, melted
1 tsp vanilla
1 1/2 tbsp corn meal
2 tbsp vinegar
1 1/2 c sugar


Beat eggs; add all other ingredients, except pie shell, and mix well. Let stand for 10 minutes. Stir gently, pour into pie shell and bake for 35 minutes at 350.

1 can Carnation milk (recipe does not give size)
1 tsp vanilla
1/2 c butter


Mix all ingredients together well. Pour into unbaked pie shell(s). Bake for 15 minutes at 425. Reduce heat to 350 and bake for 45 minutes.

6 eggs, beaten
3 c sugar
1 large can Carnation milk (no ounces given)
3 tbsp corn meal
1 tsp vanilla
2/3 c butter, melted
2 pie shells, unbaked


Preheat to 350.

Combine all ingredients except butter, mix well. Add butter and mix. Pour into pie shells. Bake for 50 to 60 minutes or until browned and set.
