Buttermilk Pie Crust Dough

2 1/2 cups unbleached flour
2 Tbls sugar ( for fruit pies, or 1 tsp sugar for savory pies)
3/4 tsp ground Kosher salt
1/2 cup chilled unsalted real butter, diced
1/2 cup chilled solid vegetable shortening
1/4 cup plus 2 Tbls cold buttermilk.


Combine flour sugar and salt in bowl of food processor, use on/off for a few seconds to blend. Add butter and shortening, on/off until it is like course meal. Add the buttermilk and process until moist clumps form. Remove from bowl and press together to form dough.

Divide in half, flatten, wrap and chill. Remove and soften slightly and roll out to shape needed.

Makes 2 crusts.
